Carlos Larrinaga, De la fonda al hotel: Turismo y hotelería privada en España entre 1900 y 1959, Granada, Comares Historia, 2021, 151 pages.

The purpose of the work carried out by Professor Carlos Larrinaga is to learn about the origins of the private tourist hotel industry in Spain, and in particular the history of the first accommodation establishments that arose at the end of the 19th century. These establishments were managed by owners who paid taxes and were subject to certain health and hygiene standards (formal accommodation). The research stops in 1959, the year in which the Stabilisation Plan was approved, which turned Spain into a leading tourist destination.
